Sunday, 11 am, I’m getting up…ok, that’s a lie, it’s 12, I’m still comfortably tucked in in my warm blanky and I don’t want to get up, like ever. But my other half is as equally lazy as I am and he is still sleeping, safe&sound. I have to feed him (and myself) and lunch is hours away so I’m getting up and preheating the oven (because it’s old and slow) to 200 – 220 Celsius degrees and mix the following sandwich scones mixture.
- cup of milk
- half a cup of yogurt
- 1 and a half cup of flour
- ham, salami
- pinch of salt
- half a pack of baking powder
- mixed seeds
- optionally fried onions
Preheat the oven to 200 – 220 Celsius degrees.
In a food blender mix together: 1 and a half cup of flour, cup of milk, half a cup of yogurt, half a pack of baking powder, pinch of salt and 2 eggs. Optionally add a handful of friend onions and whizz it up.
Take a muffin tray and smear it with oil. Add the mixture (fill up just one third of the muffin cup) and onto it place salami/ham slices (cheese is also ok), then fill one more third of the muffin cup with the mixture and place some mixed seeds on it (to make it a healthy meal 😛 ). And then crack an egg on top if it (I put 1 egg on two muffin cups; one with yolk and one with white). And sprinkle with chopped bacon.
Stick it in the oven and let it bake for 15 – 20 minutes, until the egg cooks and the scones become brownish. Voila, Sunday lazy brunch is done. 😀
